Super Tortilla Worms

Lightly toasted tortilla wraps with avocado-tomato spread, lettuce and sautéed Super Mealworms (Zophobus moria) with Jalapeños and mustard seed.

INGREDIENTS:

TORTILLA WRAPS

  • Butter

  • 2 fresh avocados

  • 1 tbsp orange marmalade

  • Pinch of ginger

  • 2 fresh, finely chopped tomatoes

  • 3 fresh, diced tomatoes

  • Juice from one lemon

  • 2 handfuls shredded mixed cheese

  • 1 chopped jalapeño pepper

  • ¼ tbsp mustard seed

  • salt and pepper to taste

  • 2 cups (or as many as you want) Super Mealworms (Zophobus moria) cleaned and frozen

DIRECTIONS:

AVOCADO SPREAD

Mix together in a bowl, avocado, 2 finely chopped tomatoes, orange marmalade, ginger, salt, pepper.

TORTILLA FILLING

Melt 1/8 cup butter (or substitute) on griddle or in frying pan over medium-high heat. Add mustard seeds and chopped jalapeno peppers until seeds begin to pop. Lower heat. Add small amount of butter and Super Mealworms. Stir until worms begin to cook and soften. Add remaining tomatoes (3 diced). Stir mixture over medium-high heat until tomatoes begin to soften and everything gets real hot. Add shredded cheeses and let simmer without stirring. Remove from heat as cheese begins to melt and bubble.

Spread butter on tortilla shell. Broil for two minutes (or until slightly brown but not too crispy) with buttered side down. Spread with avocado spread, add lettuce and  Superworm filling. Roll shell and cut into small rolls (sushi style).
