Momma Mantis' Traditional
Raspberry Walnut Hopcakes

Pancakes with raspberry, walnut and cricket compote mixed in. Serve with dollop of fresh whipped cream or syrup.

PANCAKES

Make pancake batter.
If you don’t know how to make pancake batter, read the box… dear.

RASPBERRY, WALNUT, CRICKET COMPOTE

  • 1/8 stick of butter

  • ¼ c. maple syrup

  • ½ c. crushed Walnuts

  • ½ pt. Raspberries

  • 4 dz. (or so) washed, frozen crickets

Melt butter over medium heat. Add crushed walnuts and maple syrup while stirring. Raise heat to med-high and add crickets. Continue stirring until crickets begin to cook. Add raspberries and sauté mixture until raspberries are soft and mushy.

Gently add compote to pancake batter and cook on griddle as usual.
